I thought there was a we:tag for deleting a customer but its not listed in the tag wizard. Is there an official way of doing this or do we still have to use custom code to delete/remove a registered customer?

currently not, but you can add a FeatureRequest to have <we:delete/> do this. I think this shouldn't be much work, but was never requeuested.

Good point, I've not considered the problem of tidying up customer created documents and objects. I guess this would have to be a front end option, possibly a delete button for the customer and checkboxes for the associated content (documents, objects, images, etc.). This would be really useful for sites providing content services such as blogs.
Do you know if there are any EU/Global regulations for sites to provide access to user generated content, like the Twitter or Facebook functions?
